Over the years, four generations of the family have worked in the shop, which is currently owned by Mr Andrea Garonzi.
Although the shop has modernized its tools for the treatment and preservation of the meat, it wished to keep the ancient atmosphere of the shop as well as the traditional dishes of Verona, such as the “pastisada de caval”.
The massive block made of wooden staves upon which the meat was cut in the past is still present, and well-preserved, in the shop, as well as the walls’ covering of Prun’s pink marble slabs with Verona red marble fillets, and the white marble medallion with a horse head which was once part of the counter and now hangs on the shop’s wall. The recent restoration of the ancient vaulted cellar has offered an ideal and suggestive space for the storage and preservation of salami and cheese.
Interesting facts: the white cloths, which can still be seen outside the shop, represent a historical habit of the butcher shop, when they announced their clients the delivery of fresh meat quarters. The latter were hung outside the shop and the clothes protected them from a direct contact with the wall.
