The pure resurgence waters, a habitat protected by local environmental associations as well as by the WWF, are vital for the soil where the Nano Vialone Veronese PGI rice is grown. Venturing the Veronese countryside you will discover a wonderful landscape: the rice fields. The croaking of the frogs and the flight of the herons will accompany the guide's explanation.
You will continue to a rural country house of 1742 and then to the Ferron Rice Factory with a visit to the ancient rice mill founded in 1650 and still functioning (historical monument protected and safeguarded by the Superintendency of Archaeology, Fine Arts and Landscape).
Entering the old rice mill means crossing a threshold into the past to understand the tough but fascinating job of the "Piloto" (the person who actually processes rice). The large wheel moved by the water drives nine wooden pestles, which today bleach the rice with a natural method as in the past. You will attend a brief demonstration of rice husking.
The guided tour lasts two hours, followed by the Risotto cooking class with the preparation and tasting of the typical dish of the Pianura dei Dogi paired with a glass of local wine. The course does not require any preparation or knowledge. You will be provided with all the necessary materials by the Chief.
